One thing I love about barbecue is that knowing how to use the tools you have is more important than having the most expensive grill, smoker, or accessory available. Case in point: Watch how Joe Yim from Knox Ave BBQ makes a Central Texas-style brisket on a Weber Kettle grill.
Yim starts with a 12.5-pound Prime brisket from Costco and shows you step-by-step how to prep, season, and slowly cook the meat using the modest space inside the Kettle until it’s nearly perfect. After he’s done, he smartly lets the brisket rest for 13 hours overnight before slicing. The results are impressive.
