Friday Find: The 2023 Open Fire Meat Up in Hondo, Texas
Fire master Al Frugoni brought together 30 top pitmasters from around the country to celebrate open fire cooking and raise money for charity.
Argentinian fire master Al Frugoni recently brought together some of the top pitmasters from around the country for the 2023 Open Fire Meat Up in Hondo, Texas. The spectacular event included a friendly competition featuring teams of notable pitmasters cooking goat (AKA cabrito), alligator, whole hog, chicken, and plenty of beef, including steaks, picanha, and even a whole steer cooked on an asado cross. The Open Fire Meat Up was more than just a celebration of open fire cooking — the event also raised money on behalf of local first responders.
Fogo Charcoal pitmaster (and friend of The Smoke Sheet) Captain Ron Dimpflmaier (AKA @cptnron302) was on hand at the event. He teamed up Mel Chmiler Jr. (also known as the @darksideofthegrill) to prepare whole hog three separate ways over open fire.
