In Texas barbecue, brisket is king. With the continued growth in popularity of Texas barbecue throughout the nation, this tough cut of beef can be found on restaurant menus far outside the Lone Star State, to various degrees of success.

There is something special about the simplicity of a slice of Texas-style brisket seasoned only with salt and pepper, smoked low and slow for several hours. Yet it is also wonderful to see restaurants expand the definition of what barbecue can be. I especially enjoy seeing barbecue joints find creative ways to incorporate brisket into the dishes on their menus.

What follows is a list of some of my favorite brisket dishes from barbecue joints across the country. Here are five incredible dishes every brisket lover should try.

Bubba Cole — Blake’s at Southern Milling

The famous Bubba Cole sandwich from Blake’s at Southern Milling in Martin, Tennessee, is the brainchild of pitmaster and owner Blake Stoker. The sandwich consists of a mountain of delicious smoked brisket and turkey topped with creamy pimento cheese on a toasted bun.

Pad Thai Brisket — Buck Tui BBQ

Buck Tui BBQ in Kansas City combines KC-style barbecue with the Thai cuisine of pitmaster Ted Liberda’s heritage. The Pad Thai Brisket consists of wok-fried rice noodles, egg, cabbage, bean sprouts, scallions, peanuts, and lime topped with delicious smoked brisket.
