The barbecue world is a living, breathing thing, with new trends and dynamic voices emerging each year and changing the game. Whether they are showcasing innovative culinary ideas or original business models, we’ve been impressed by many of the next generation of pitmasters and chefs.
Today’s feature highlights some of the most original pitmasters nationwide, taking the BBQ community by storm. We selected people from different states, including Texas, Missouri, California, North Carolina, and New York.
Without further ado, here are six pitmasters who have become innovative powerhouses in the U.S. (Plus, a slew of honorable mentions too!)
Daniel Castillo
Daniel Castillo and his team at Heritage Barbecue in Southern California have been blazing a trail for new-school Cali BBQ for the past few years. His restaurant embraces seasonal foods and brings influences from Texas and many other regions (the menu recently featured housemade beef and broccoli sausage), but he also cares deeply about executing core items like brisket and tri-tip. The Orange County Register named Heritage Barbecue the 2022 Restaurant of the Year, a great feat for a BBQ joint, and he’s sure to collect more accolades in the future.
